Do you mean novelisations?
So far, the closest thing is some Compliation of FF7 fiction which I think was released free online and in japanese. Other than that, no, they don't sell novels. There are no official novels, but if you mean strategy guides, there are at least four for FF6:

There have also been scriptbooks released for FF7-FF10, but those are only in Japanese. And I think they're also out of print now (I've had trouble locating them, even at places like Kinokuniya and even used book shops).

you now, ive always had the same hunch about a Final Fantasy Novel. It would be cool to get the rumors straightened out, and to see the story progress through the charecters eyes. Its a bit of a gamble, but id like to see them give it a shot.

There are 'Source Books' (not the real name, but an example) that were for FFs IV-VI, but those are very obscure and I don't know too much about them.

Maiden Who Travels the Planet.
This more or less ads to what Magicite already mentioned about strategy guides, as this is a novelization (yeah, 'novelization') that appears in the Omega strategy guide for FFVII. Apparently, it's a tale that delves further into Aerith's character as she journeys through the lifestream. Of course, this is FFVII. As far as I know, no FFVI novels exist. You can buy Final Fantasy sheet music. I have the books for FF5 and FF8. (I would have better books, but the best books, such as FF4 and FF6, where on eternal backorder.)

Maiden Who Travels the Planet, Case of Denzel, and Case of Tifa are three novellas for FFVII. (Lothar explained Maiden, and I bet you can guess what the Case of Tifa/Denzel are about.)
