So I'm supposed to be going to Gongaga right now, but I ended up at Cosmo Canyon and I started up that little thing where you take Red XIII into those caves and such. I got out, but now I want to get Barrett back on my team but for this little "mission" I need Red. Is there any way around this?

If you haven't saved, you could reset and try avoiding going by Cosmo Canyon.
If you have saved, then you may just have to suck it up and go through the Cave of the Gi |

Anything in Gongaga is completely optional -- you can skip it the entire game and only miss out on a few worthwhile things (Deathblow, namely). As for swapping party members after agreeing to go with Bugenhagen, I do believe you can go back down to the Cosmo Candle (large campfire) and switch out party members there. My notes confirm that you can _definitely_ switch party members before you go in, but I only half-sure about afterwards. Worth a try, though.
PS - If you initiated the Cosmo Canyon events and saved, I don't know if the Gongaga fight with the Turks is still cued. I don't think it is (although I'm fairly certain the scene in the reactor still cues). You can speak to other members of AVALANCHE around the town. Your team would then be Barret, Cloud and Nanaki so tough luck if you wanted someone else instead of Nanaki.
As for Gongaga, you should seriously go there. Deathblow, Titan as well as the materia and armour in the shop is worthwhile. Not to mention a battle with the Turks. Also, on the beach outside Gongaga you can fight monsters which give you Big Guard Enemy Skill which is arguably the best in the game. Oh, and don't forget, don't drive towards Nibelheim as you leave Cosmo Canyan or the buggy will break down. Don't you get to choose your party before you enter the cave?
