When someone is wearing the Cursed Shield in battle and dies does that make the doom countdown go away?

And also how can you see how much battles you fought with it?

First question: Yes. If they die from countdown and are revived, there is no countdown.
Second question: No. There is no way to see how far along you are on uncursing the bugger. Just spend an hour or two fighting on the Solitary Island; quickest and dirtiest way.

yeah, the condemned thing goes away after first death, and you cannot see how many battles, thought it would be quite convenient if you could.

I prefer fighting somewhere tough, so you actually get something out of fighting all these monsters: level ups

Actually, it's not such a bad idea to have a couple hundred MP worth of battles without any level-ups; it gives you a great chance to work on espers that don't give level-up bonuses like Alexandr, Palidor, and Phoenix. Plus, why would you force the Curse Shield on yourself for several difficult battles in a row, when you could get it over in less than two hours?

i see your point, but you can just use the veldt and not gain any experience at all. that's the main way to get a character that knows every spell without wasting level up bonuses.

and really, it depends on the character and how you wish to build it primarily.
