Sabin the cabin all the way. It sounds more regal. I might be wrong but I think Say-bin is an American pronunciation like tom-ey-toe rather than tom-ah-toe. Having said that we still say Sagan the Say-gan way. But then I say Sagat as Sah-gat. Difficult.

Well Sagat is Thai, Sabin is Western. I don't see how King Sabin is more regal sounding than King Say-bin.

I've always read it as Say-bin, just as I pronounce Sagan Say-gan. That said, I do agree Sagat is Sah-gat. Go figure.

I don't obviously think there's a right and wrong way. I always thought it was sah-been (like bean). Apparently this is not so.
