It might be an obvious question but what do these do exactly? I have't been able to find out just searching around the internet or even in my instruction manual.

Vigor is a factor in determining how much damage you give out and recieve. Stamina is a factor in determining how much hp you gain per level.

While the link should suffice, SMB posted wrong info. Vigor is a factor in the amount of physical damage you wind up doing; Stamina is a factor in the chances of some death-based attacks of hitting or not. It's why moves like Raiden's True Edge, despite a Hit Rate of 140 can still miss against targets even when they don't have any Mblock.
