Grissini Project has done LOADS of covers including One Winged Angel and Terra's theme I thoroughly recommend checking them out

Johnny Atma all the way. He's literally named after FF6's midboss!

His YouTube channel is named GaMetal, and he does some pretty fantastic stuff, including a dozen Final Fantasy covers (Dancing Mad is incredible). But, since you asked for FF7, here are the two that fit the budget:
