Why not kill doc odine and just destroy the junction machine?
Without elleone,scientists wouldn't be able to technically map her brain out and make it possible to project ultimecia's mind into the past.

Technically speaking:Without doc odine or his machine,ultimecia is stuck in the future with no way to act in the past.

I suppose the problem is killing Odine would create a paradox whereby they never had the motive to kill him as Ultimecia never started causing trouble in the first place.
Another explanation I've heard is that this action would create an alternate universe where Ulimecia wasn't a problem, but wouldn't stop the Ultimecia of their own universe who had already acted.

So what? it would prevent her from being able to compress time.It would be like:whats worse? You kill 1 person? or risk the destruction of an entire universe?

I don't think you understand what I said.
If they kill Odine, Ultimecia never got to go back in time, therefore they never had a reason to decide to kill Odine.
It's like the grandfather paradox-if you went back in time and killed your own grandfather, you never would have existed and therefore couldn't have gone back in time to kill him.
