I think it's only sensible to fight Ruby solo, since he can only be damaged when his tentacles are in the ground, and he only does THAT when two characters are dead/removed from the battle(better to do it yourself beforehand).

I haven't watched the video but I'm guessing it's either a KoR spam or a Limit spam.

Does anyone actually like Cait Sith?

Yeah I just beat Ruby the other day, alone with Cloud. And I beat Emerald alone with Cloud two days ago, its easy if you know what you're doing. Equip Cloud with two mastered Hp pluses, a mime, Knights of the round with Hp absorb, and W-summon That way Aire dam storm only does like six thousand. I summoned Knights of the round twice and kept mimicing it. Easy with only a level sixty seven Cloud
