So, I've obtained all the enemy skills in the game on one materia. As for the other 3 I'm only missing two. Trine and ???? (from the Jersey mobs in Shinra Manor). I'm already pretty sure I've missed out completely on Trine but I'm having some trouble getting the Jersey's to appear. Been at it for about 2 hours and not a single spawn. Are those particular mobs disc 1 and 2 only or am I just really unlucky? Also... if anyone has any info on whether or not I'm locked out from getting Trine now it would be appreciated. Thanks.

Nope, you cannot get Trine anymore. The latest you could get it was near the end of Disc 2, Inside Gaea's Cliff.

And as for Jerseys, you can find them by going upstairs and turning right, in Disc 1-3. You know, the area with the stairs leading down to the Secret Library etc.

I am also currently maxing out my E. Skill and I am almost finished, other than Bad Breath, Shadow Flare and Death Sentence.

Cool. Thanks for the info on the Jersey's. i had been just running around the main corridor and piano rooms aimlessly killing Dorky Faces ad nauseam. Sucks about Trine though. =(

I've just remembered...

If you haven't already, you could fight Godo in the Wutai Pagoda with Yuffie, and learn Trine from him.
