Couldn't they just cast Reflect on the monster so it wouldn't heal, and instead heal them? I don't know anything about this monster, but still if the problem was the monster's constant healing (if it was magic) then they just shoud have cast reflect!

18 hours and that monster still had MP? I seriously doubt it was magic. Unless it kept regaining MP somehow.

I could see it still having MP, depending on how the spells were set up and what its max MP was (or if it had, say, the equivalent of the FFT reaction ability Absorb MP). I imagine that if they took that long before bailing, they were probably attempting the battle with fewer players than recommended, and/or were unintentionally using an element that it absorbed. Of course, this is all speculation.

Not all healing abilities are Reflectable, and I'm not sure whether you can cast Reflect at a monster at all in FF XI.

While the monsters extremely high endurance can be explained by constant healing, factorial regeneration or some kind of HP calculation bug, what I'm surprised is, that the players lasted those 18 hours. Shouldn't their healers run out of MP?

If FFXI is set up anything like WoW, there is a stat that players can focus on building up through talents and gearing called MP/5. It basically is the mana regen stat that raiders look for, since raid boss fights are getting longer and mana pools are being stretched to their limits.
