I've gotten the Knights of the Round summon, but it's not leveling up. It's been at 50000 for a very long time, and the AP is not decreasing. Is there something wrong with it? Do I need to pair it up with a specific materia or will it just take awhile for it to level up?

If it's equipped on any weapon with Zero materia growth, i.e the ultimate weapons, no AP will be gained on any of the materia in that weapon. You'll have to switch to a less powerful weapon with Normal, Double or triple growth to level it up.

Edit: You can see what type of growth the weapon has in the weapon/materia menus, iirc.

Otherwise, it could be that the enemies you are training against don't give you much AP. Some don't give you any at all. Are any of the other materia on that weapon/armor gaining AP?
