I was flipping through a copy of Game Informer at gamestop when i saw a small artical on Crisis Core. I'm not sure on the details, but it said something like if you beat the game on a new game + file (second playthrough), a message would appear, showing the FF7 tech demo with the words "To be continued in FF7"

It's a prequel. That means it is before the game. Thus, the original game continues the story.
True, this means it all remains valid, remake or no, but the fact is, prequel. I am of the opinon a remake is in all honesty likely, nay, inevitable. But not nessicarily this generation of consoles. Not even within the next five years. They have plans to drag this out for another decade. If I were a betting man, I'd wager that a remake will come out on the 20th anniversary of the original's release. But every single time that tech demo is wheeled out as evidence is painful when the most likely truth is so fragging obvious.
