What exactly is the female mime? She looks like a cat or something...

As far as I can figure, the female has a fabric mask cut into the shape of a cattish/bunnyish creature. The turtleneck covers up the part where the mask would most likely end, and you can see the stitching up the sides.

of course is a mask, but I see more like a fox mask than other thing, mimes tend to cover her/his face but they don`t morph into other creatures...or yes? ^_^

Maybe it's just to give off a bit of neutrality to go along with the functions. I know I can't associate the mask with any other class in the game.

IIRC, in japanese folklore, trixter spirits assumed the shape of foxes or something like that. In many cultures, foxes are associated with playing tricks on others or being unusually resourceful. There's probably a link here, but I'm wiped out and too tired to put A and B together. Should be obvious anyways.
Also, in theater, people often wear white masks frozen into some kind of expression. I think it's supposed to be a Tanuki.

It could also be a kitsune, the fox spirits of Japanese mythology as well (like the passage above says).

A little off-topic here but not by much, is the male-mime some kind of bird? (if you look at his picture on the avatars here it appears to be the head of a bird backwards) and if so, is it some kind of special one from japanese mythology or something lol, (a tanuki sounds sacred or something

The female mime is a fox (probably a kitsune), the male mime is a bird (i'm guessing a raven, but it looks more like a tucan).
