I would like to know if there is an editor out their that enables weapon sprites to be edited. I have tried Googling, but I have had no luck. Thanks in advance to anyone who can let me know if there is one and where to find it.

I believe the only editors available for FFVI at this time are the ones on this page. Unless you're real good at hacking I don't think there's any way to edit the appearance of weapons in battle.
