Okay so we all know about the date scene right?
I always get on of the two girls Tiffa & Aeris... You can also get a date with Barret or Yuffie, both of which are better IMO. To get them you have to select the right options from the beginning of the game in things like character selection and choices of what to say to people. There are masses of guides out there to show you what to do.

I got Tifa on this sequence without even trying. I didn't even know the scene could be changed, much less EXISTED.

The date with Barrett is actually pretty humorous. He orders you around most of the time, and then doesn't say anything during the gondola scene at all, so it's just you two sitting there very silent and awkward. Haven't actually gotten the date with Yuffie, I'll have to try for it next time.
