Given the amount of video game music we've all heard, I'd make a wager that the majority of people here have heard a good few remixes, as well. So show your favourites, and explain why they stick out to you.

Walk On Water - Sonic 3
This one's from Project Chaos, a project dedicated to the soundtrack of Sonic 3 and Knuckles. It has a lot to live up to, since Hydrocity Zone has amazing music anyway, especially Act 2, but housethegrate pulls it off amazingly. Not going too far into his own work, he sticks to the original track, and manages to link the two Acts together brilliantly. By far one of the best tracks in the Project, and one I can listen to on repeat for crazy amounts of time.

Helium Stairways - Sonic 3
I love this track. Another from Project Chaos, only when looking it up to post here did I realise that it's a remix of Balloon Park. I then thought "Oh yeah, I guess it is." So yeah, maybe it isn't the most faithful to the original (or maybe I never played Competition mode enough to notice?), but I love the whole thing - the quiet piano intro, the building up of the track, and then how it mellows out towards the end.

Survival Instinct - Final Fantasy IV
This from Echoes of Betrayal, Light and Redemption. Unlike Project Chaos, which I can listen to from start to finish without minding, The FFIV album is very hit and miss. This one, in my opinion, is a hit. Appropriately titled Survival Instinct, it brings back the memories of fighting those devilishly hard battles against Demon Wall, Bahamut, and everything that just made you think "OH GOD HE'S ABOUT TO KILL ME THIS TIME - QUICK ROSA, HEAL ME ALREADY AAAAAAH".

Stone Eyes - Final Fantasy VII
Piano + The Great Warrior = I really don't have the words to describe how incredible this song is. Like with the FFIV album, Voices of the Lifestream has very few REALLY memorable tracks. This is one of them.

Fleeting Ecstasy - Mairo
I didn't think at first that the Wing Cap theme from Mairo 64 and the Invincibility theme from the series would mash. But they do, in spectacular glory. The saxaphone in this mix is perfect. The usage of the pipe-entry sound is pretty sweet, too.

Smoothie Brace - Cave Story
This one doesn't sound so much like the original track, Geothermal, but as the name implies, it's smoooooooth.

Runway - Goldeneye Source <- Also shameless plug.
Although this may count more as a Remaster than a Remix, still worth a mention. So is the rest of the soundtrack, really - Audix and Basstronix did a heck of a job on it. Another soundtrack I can easily listen to.

Other not-really-remixes
Hill Top Zone/Emerald Hill
Mega Man 3 (Contains Profanity)
Nico Nico Douga Medley

I'm not a huge fan of so-called 'traditional' remixes, but I'm a sucker for piano music...

The legendary 'reborn' arrangement of Dancing Mad (and if it's not legendary, it should be) reminds me of Glenn Gould...this isn't the original arrangement, but it was the best version of it I could find on Youtube. Mp3s of the original piano versions are http://www.fantasyreborn.com/ff.html

I'm going to cheat a bit with these first three songs. I would still consider these remixes of the original Katamari theme song even though they were all in later releases of Katamari games:

Katamari on the Rocks (song 2)

Katamari on the Swing

Katamari on the Swing (SEXY-SYNTHESIZER ALL ABOUT NAMCO Mix)
- I can't tell if is better than the original or just ten times as annoying.

Here's a legit fan remix off of OCremix to balance those out:
Wind Waker - Pirates of Dragon Roost Isle

I might even be back later to post more

Most of the ones I recall are either from games you guys haven't played or just plain weird. However, I think I might have one thing of interest at the moment: All fear Zerovos, the true villain of the Supersoft era!

I'm rather partial to this version of Sonic 3's Data Select. Here's a nice one of Hidden Palace. And a splendid orchestral rendition of Aquatic Mischief Ruin (the composer has some other nice orchestration in a similar vein).

Sonic Megamix includes a rendition of a familiar theme from Mega Man 2.

Away from Sonic, here's a Corneria remix from SNES Starfox. And in the not-really-a-remix category, an orchestral version of its ending theme.

There are about a hundred trillion Chrono Trigger remixes on Chrono Compendium. Scroll down to the Remake Project tracks for my favourites, also in the non-remix category for the most part.

More not-really-remixes-but-awesome:
Mark Kump's tear-jerking tribute to his beloved uncle Walter.
Turns out these were the same song all along. (You've probably seen this before but it bears repeating.
