Well I saw in many pages (not to say all) that the only method they offer to beat ruby or emerald weapons are with the all mighty KORT, well I defeated them without it and is pretty much easier:

Emerald: just lvl up 2 characters (cuz cloud is necesary) but I recommend barret and cid or even yuffie. DO NOT equip more than 7 materias in each one because as you know its aire tam storm inflicts damage equals to the numbers of materia your characters had (1 materia= 1111 damage).
- hp plus materia master ( only one per character)
- 2 of them equiped with enemy skill materia (must have dragon force and big guard).
- long range materia at least for one of them.
- another with phoenix materia ( just in case)
- good ARMOR IS NOT NECESSARY HERE , instead sprint shoes.
- when you lvl up make it in gelnika with yuffie, equip her last weapon the conformer and morph materia. morph the monsters that turns into luck and speed source is really easy with a cahmpion´s belt she inflict nearly 9999 damage to them. Then morph the spiral monster that is near midel for guard sources until you get at least cloud with 255 of vitality, luck and speed because weapons attack DO NOT CONSIDER ARMOR VALUES IN ITS ATTACK so your stats are the only help here.

So before give everyone a hyper then enter the battle and quickly cast big guard with one then the other one cast dragon force if its possible but better save its turn and wait, its most likely that emerald will hit you with its beam so your 99 megalixir (the w-item bug) will be a good help here.
And nuke him with limits like omnislash, catastrophe and highwind (highwind deals less damage so you better keep cid healing with megalixirs) or in the case you bring yuffie with her 3 limit doom of the living. so weapon will get angry and attack you with his rays but thanks to dragon force, big guard and your high stats you wont fall. Then aire tam storm will be its last chance but since you are carrying few materias it wont mean any problem... ITS DONE that cursed thing will dissapear in less than 11 minutes:
-Without using KORT.
-Without equiping lots of materia (quadra,w- summon, lots of hp plus, mp turbo, full life , etc .... -.-" ).
-Without ziedrichs (lot of defense but its useless against weapon and it doesnt have any slot).
- without the underwater materia (it useless also that counter gives more emotion to the battle).
Rubi: nearly the same as emerald:
- Only start with cloud with phoenix and use it then cast big guard with one and dragon force with other... etc.
- YOU DONT NEED TO USE MAGIC like ultima or bahamut zero because it will be a waste of time. Rubi has a shield so you need to break that shield , is not a surprise that you will hit 0 on it but after 3 omnislash that thing will be done.
- Instead of sprint shoes, equip ribbons.
- use megalixir whenever you take damage.

Its easy if you know how to use each materia, so FOR ME KORT is but only part of my materia collection.
The arp of earth and rose desert are just for exchanging ( I bet you dont believe in that crap that aeris can be revived bla bla bla.. ).
Well I hope that this will be of some help.

I'm fairly certain you can't beat Ruby like that. From what I recall, Ruby doesn't have a Shield, she's just got extremely high Vitality, which basically nulls physical attacks. Also, if you start the fight with more than one person alive, Ruby often will Whirlsand them out of the battle, until there is only one left. So you're going to have to get those Enemy Skills in quick if you get them in at all. You are correct when you say that it is possible to beat Ruby without KotR (or any summons really), but there's really no point. It takes just as long to prepare the KotR way as the non-KotR way.

If you are patient enough you can kill Ruby with Hades and a mime alone. If you are here regularly then I'm sure you've heard (or seen) me say that Ruby is vulnerable to the status effect "Stop" so you can use Hades to effectively kill Ruby. I've killed him WITOUT KOTR and he only hits me ONE time every time I fight him as long as I use Hades about every other turn.

Well I dopnt know if it is a shield or its high vitality but after 5 or 6 hit it receives damage so I thought that it was a shield... well defeating weapons withouth using KORT or magics or even summons is very fun, now I beat it with limits not with melee hits that is for sure that doesn´t work in it.

Now I know something interesting.. you said that ruby is vulnerable to stop? I didn´t know that... perhaps if I use add stat+time mmm could it be? And not to start the fight with 3 characters, is obvious that you have to kill 2 of them and only leave one (of course cloud) then raise them to avoid the quicksand ruby uses.

I have a couple of questions :

1. There is a place in this forum for FF 8 or 9? I didnt saw any..
2. Can I post something about other game that isn´t from square? (legend of dragon) ¿?¿. Thanks.

I managed to beat ruby without kotr, but it's been a while so I'm not sure how I did it. It wasn't that way though, I'm sure of that much.

For ruby I used yuffie solo and she didnt get hit once; her normal evade is about 152% or something and magic evade of 72%..

For Emerald I took advantage of Airetam storm by having 9999 and two materia equipped proccing Lucky 7777's cheat evertytime... VERY easy fight!

BTW, Yuffie is like one of my fav chars, she's usually in mah party anyway, might as well make her a she-pimp and smack emmy and ruby around. (BTW, the lucky 7777's can be used by anyone as I said earlier, just a small note though, if unconcievably it survives (perhaps you should take that mop off of Cid), you'll be at a grand total of 1HP)

I've never had any trouble picking off the Emerald weapon without KOTR, but it seems darn near impossible to kill the ruby with it. Every time you think you're getting close, he goes and kicks one of your people out of the battle. It's frustrating. But yes, that mime trick works. Otherwise, be PATIENT.
