Yea, this may be a stupid question, but where does it ever mention Gainsborough in-game?
For those going huh? It's Aeris's supposed Last name, which I do not remember ever being stated.... I think Cloud's was mentioned a few times, but not often, and I don't remember Barret's being stated either. I'm pretty sure it doesn't mention Aeris' nor Elmyra's last name in-game, although it does in the booklet you get with the game.
At my last board, we had a rather lengthy discussion about which characters had last names that were actually mentioned in-game, whether having last names makes it easier to relate to the characters, and why Vivi had a last name, since technically he is a doll raised by a thing with no last name. On edit: I think it's a terrible injustice that none of the FFX characters have last names. I like knowing they have a last name, A. it signifies that they have a family, and B. It's a neat thing to know, and often times either fits the character (Cid Highwind) or doesn't in an ironic sense, (LOL Vincent Valentine)

All their last names were stated in the short character descriptions which were written in the official instruction manual that came with the game. That is the only time I can remember square actually stating their last names, but I suppose that does make it official.

I looked through my script and apparently it's not mentioned. Then again, apparently none of the characters surnames are revealed through dialogue so it's not that surprising.

I think it be sort of weird for their last names to be mentioned, as it would either have to be a culture thing, or somebody calling them Mr. or Ms. As mentioned, it was definitely said by Square Enix, and just like Dumbledore's homosexuality, you just have to go with what the creator says. Even if it's not apart of the original source material.

It's script is a thing I was cracking out a few years back. It's incomplete (up to the Mt. Corel reactor run?) and just a thing for personal use. You'll only see the names in the guide because you can change their name to whatever you like. While her official name is Aeris Gainsborough you might as well change it to Horseneck if you like. Unless they had a choice to change her second name (although I have seen that in a few quite modern games) it would defeat the point of naming her yourself if they started calling her Horseneck Gainsborough.

Its the same with ff8 as well, they have surnames in the manual, but never in the game. however, if not being in the game means they dont actually have surnames, then the main character in ffx doesnt even have a first name, it being the only one you can change in the game, means none of the characters can actually speak his name.

Yeah as far as i know they dont reveal their last names in the dialogue- this is probably because you can rename your characters and it would be annoying if you named Barret 'John' and then the dialogue talked about John Wallace and you didnt like the last name. Simple, practical explanation i think.
