Like the topic asks, are they really bosses worth trying to steal from. The minerva plate looks enticing along with the red jacket, but im not sure if theres an easier or better way to get them...

It depends on your inventory at the time; you really only need a single Red Jacket and two Minerva bustiers, which can all be easily obtained before. Safety Bit is the rarest of them all, but as a Relic not really worth it.
But if you have neither of those armors: the Minerva Bustier is easily the best option for Terra/Celes, and the Red Jacket is Sabin's strongest armor in every aspect. -------------------- |

If I recall correctly, Edgar can also equip the red jacket... so if you want fire immunity for part 3 of the final battle and want to use your shield slot for something else, say a weapon, it'd be nice to have a second Red Jacket.
