For me, it's V any day. I posted my reasons why in a thread about favorite RPGs, but I'm too lazy to find it.

Dragon Quest IX

Hated the rest sorry, but IX made everything about DQ really fun.

For me it's either V or VIII. V has the best hero, some nice meaty monster recruitment, and a lovely story arc with great callbacks. VIII has by FAR the most stunning visuals and audio in the series, a great core cast of characters and serviceable story, and excellent combat and ability systems that balance customization and individuality brilliantly. I guess I prefer V for its characters and story and VIII for its gameplay and presentation.
