I was around level seventy when I fought sephiroth and I had no problem fighting him at all. I dont even think I had to revive a character

Final bosses are a trap in this regard. By the time you hit the final boss, you tend to overprepare for them. You have the best weapons, best materia, and you use your most powerful moves. This is expected. All I can say is just try it when you're a little weaker.

Yes Sephiroth is easy but it's only because you used the strategy guide you big cheater

I think Chevleclair has it. This seems to be a pretty normal part of rpgs (or at leas it used to be). You can over prepare for them because it's ::gasp:: the final boss!
It's been a long time since I played the game, but if I remember right there is a difference in his DEpending on your level. If you get to him at level 75 he has lower HP and is easier to defeat. Don't quote me on that though. May be something to look into if you are wanting him to be a challenge.
